This relish is more than just a condiment and brightens and brings freshness to grilled fish, baked pork chops or a simple cracker for a delectable snack.

Cherry & Pomegranate Olive Mint Relish

Yield: About 2 ½ Cups

Recipe Type: Dinner, Snack


  • 1 cup parsley, finely chopped
  • ¼ cup mint, finely chopped
  • ½ cup kalamata or green olives, chopped
  • ½ cup fennel, finely chopped
  • ¼ cup pomegranate seeds
  • 1 cup black sweet cherries, pitted and halved
  • ¼ cup toasted walnuts, toasted
  • 2 scallions, minced
  • 1 tablespoons extra-virgin olive oil
  • 2 teaspoons lemon juice, fresh squeezed
  • ½ teaspoon freshly ground black pepper
  • Sea Salt


  1. Put the parsley, mint, olives, fennel, cherries, pomegranate seeds, walnuts, scallions, olive oil, 2 teaspoons of lemon juice, black pepper, and a pinch of salt in a bowl and stir gently to combine.
  2. Taste to determine whether you need another pinch or salt or another squeeze of lemon.  Add if needed and enjoy!

Notes & Variations:

Enjoy with crackers as a snack or use it to top your fish or pork chop for a fresh finish to your meal.

For optimal flavor cover and let sit at room temperature for 15 minutes before serving.
